For power you can size a battery bank sized to handle the DC load for 20 coolers. A/C shiftpods are common at burning man, and the company was built by burners, and now shiftpods are used in emergency response as well as shelter systems in 3rd world countries. There might be some burners here who can speak to using A/C with the ShiftPod. Edit: Shiftpods were designed to be used with A/C, they have A/C ports in them.

I'm not super familiar with the shift pod, but is sounds like any pop up tent will suit your purposes. They take minutes to deploy, are easy to do by yourself. The bigger ones are usually designed to walk in. I'll let others suggest specific brands since I hammock camp but depending on how fast you need it you might just want to look local anyway.

Shiftpod recommends reinforcing the roof during high winds, so we brought a 1" wide pvc pipe exactly 6'2" long. This was just big enough to prop up the roof in the middle of the tent during windstorms, but I don't think it was really ever necessary this year.
