Try placing the vampires in a valid tile. Vampire castles cannot be placed on resources (Rice, Iron, etc) or features (Floodplains, Volcanic Soil, Woods, etc). Rule 5: If you focus early-game on increasing the vampire's combat strength through the bonus by killing units adjacent to it, by renaissance era it can become stronger than modern armors... One vampire + siege tower + 1 melee support + 1 cavalry can bring down a whole civilization.

Castles don't auto-update their yields if the surrounding tiles have their yields changed (i.e. building a mine on an adjacent tile). The fix is to remove the castle and rebuild it. Definitely give it a try. Also easiest way to check to see if your vampire are getting stronger is to kill a unit with them. They have this cool kill animation where they suck the life force out of the killed unit. Yup, it just wasn't showing up as base, fuckin derp. Glad you figured it out!
